Start by preheating your oven to 350°F (175°C).
Line your baking sheet with parchment paper.

In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Mix everything together until the oats are evenly coated.
Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly.
Bake for 20-25 minutes, stirring halfway through. Keep an eye on it to prevent burning.
Once baked, remove from the oven and allow to cool completely on the baking sheet.
Transfer to an airtight container for storage.
