Ingredients

  • 1 whole fresh lemon preferably organic, for its zest and juice
  • 1/2 bunch fresh parsley flat Italian or curly based on preference
  • 2 cloves garlic fresh, avoid pre-minced for best taste

Instructions

  • Start by washing the parsley thoroughly to remove any dirt or grit. Pat it dry with a clean kitchen towel or paper towel.
  • Using your chef's knife, finely chop the parsley. The smaller the pieces, the better the gremolata will blend together.
  • Peel the garlic cloves and finely mince them. You can also use a garlic press for a finer texture if you prefer.
  • Using a microplane or zester, carefully zest the lemon. Be cautious to only take the yellow part of the peel, avoiding the bitter white pith underneath.
  • In a bowl, combine the chopped parsley, minced garlic, and lemon zest. Mix well.
  • Cut the lemon in half and squeeze the juice into the bowl, ensuring to catch any seeds. Stir until everything is well combined.
  • Taste your gremolata and adjust the seasoning if necessary. You might want to add a pinch of salt or more lemon juice depending on your preference.
