Ingredients

  • 1 head cauliflower cut into florets
  • 2 large eggs
  • 1 cup shredded Italian blend cheese
  • 1 tablespoon Italian seasoning
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • ½ cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400°F (200°C) for even cooking.
  • Place cauliflower florets in a food processor and pulse until resembling rice. Transfer to a microwave-safe bowl.
  • Cover and microwave the cauliflower for 5-7 minutes until tender. Let cool.
  • Transfer cooled cauliflower to a clean kitchen towel and squeeze out excess moisture.
  • In a mixing bowl, combine drained cauliflower, eggs, ¾ cup of Italian cheese, Italian seasoning, basil, garlic powder, salt, and pepper. Mix well.
  • Line a baking sheet with parchment paper. Shape the cauliflower mixture into a rectangle about ½ inch thick.
  • Bake for 25-30 minutes until golden brown and firm.
  • Sprinkle remaining cheese on top and bake for an additional 5-7 minutes until melted.
  • Garnish with fresh basil, cool slightly, and cut into strips. Serve warm!
