Preheat your oven to 400°F (200°C) for even cooking.
Place cauliflower florets in a food processor and pulse until resembling rice. Transfer to a microwave-safe bowl.
Cover and microwave the cauliflower for 5-7 minutes until tender. Let cool.
Transfer cooled cauliflower to a clean kitchen towel and squeeze out excess moisture.
In a mixing bowl, combine drained cauliflower, eggs, ¾ cup of Italian cheese, Italian seasoning, basil, garlic powder, salt, and pepper. Mix well.
Line a baking sheet with parchment paper. Shape the cauliflower mixture into a rectangle about ½ inch thick.
Bake for 25-30 minutes until golden brown and firm.
Sprinkle remaining cheese on top and bake for an additional 5-7 minutes until melted.
Garnish with fresh basil, cool slightly, and cut into strips. Serve warm!
