Ingredients

  • 4 pcs eggs
  • 1 cup powdered sugar
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon vanilla extract
  • 4 teaspoons butter
  • to taste Fresh berries for serving
  • to taste Whipped cream for serving

Instructions

  • In a mixing bowl, whisk together the 4 eggs and 1 cup of powdered sugar until well combined. Gradually add in the 1 cup of all-purpose flour, whisking continuously to avoid lumps. Slowly pour in the 2 cups of milk while continuing to whisk. Add the 1/2 teaspoon of vanilla extract and mix until the batter is smooth and free of lumps. Let the batter rest for about 30 minutes to allow the flour to hydrate.
  • Place a non-stick skillet or crepe pan over medium heat. Add 1 teaspoon of butter and allow it to melt, coating the bottom of the pan evenly.
  • Using a ladle, pour about 1/4 cup of the crepe batter into the hot skillet. Immediately tilt and swirl the pan to spread the batter evenly into a thin layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown.
  • Carefully slide a spatula under the crepe and flip it over. Cook for an additional 1 minute on the other side. Once done, transfer the crepe to a plate and repeat the process with the remaining batter, adding more butter to the pan as needed.
  • Stack the cooked crepes on a plate. Serve warm with fresh berries and whipped cream on top. Drizzle with a little extra powdered sugar or maple syrup if desired.

Notes

  • Crepes can be stored in the refrigerator for up to 3 days.
