Ingredients

  • 1 pound chicken breast diced
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves fresh
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 8 ounces cheese tortellini
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • fresh basil for garnish

Instructions

  • Heat the olive oil in your large skillet over medium-high heat. Add the diced chicken breast, seasoning it with salt, pepper, and half of the Italian seasoning. Cook until golden brown and cooked through, about 6-7 minutes. Remove chicken and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then add the halved cherry tomatoes and cook for 3-4 minutes until they soften and release their juices, stirring occasionally.
  • Add the fresh spinach leaves and stir until they begin to wilt. Pour in the heavy cream and sprinkle the remaining Italian seasoning. Stir and bring to a gentle simmer.
  • Add the cheese tortellini to the skillet and stir gently to coat with the sauce. Cook for 4-5 minutes until the tortellini is tender, adjusting time if using frozen tortellini.
  • Return the cooked chicken to the skillet and stir into the creamy mixture. Sprinkle grated Parmesan cheese and stir until melted and combined. Taste and adjust seasoning with salt and pepper.
  • Remove from heat and garnish with fresh basil leaves. Serve immediately for best flavor and texture.
