Ingredients

  • 2 lbs boneless skinless chicken breasts cut or pounded to thin cutlets
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 4 cloves garlic pressed
  • 28 oz crushed tomatoes (1 can)
  • 1 tbsp Italian seasoning (dried)
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese
  • 1/3 cup fresh basil chopped

Instructions

  • Begin by cutting or pounding your chicken breasts into thin cutlets. This ensures they cook evenly and quickly. Pat them dry with a paper towel, then season both sides with garlic powder, salt, and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken cutlets in a single layer. Cook for about 4-5 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the pressed garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it! Next, pour in the crushed tomatoes and add the Italian seasoning and additional salt. Stir to combine and let it simmer for about 5 minutes.
  • Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Allow the mixture to heat through, stirring until the cheese is melted and the sauce is creamy.
  • Return the cooked chicken to the skillet, spooning the creamy tomato sauce over the top. Let it simmer for another 2-3 minutes, allowing the chicken to soak up the flavors.
