  • 12 ounces medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 whole lemon, juiced
  • 3 cloves garlic, minced
  • Salt, to taste

  • 8 ounces pasta (such as spaghetti or fettuccine)
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese (optional, for serving)

Instructions

  • Step 1: Cook the Pasta. Begin by cooking your pasta of choice according to the package instructions. Be sure to salt the water well. Once cooked, reserve about a cup of pasta water, then drain the pasta and set it aside.
  • Step 2: Prepare the Shrimp. In a large skillet over medium-high heat, add the tablespoon of olive oil. Once the oil is hot, add the peeled and deveined shrimp to the pan. Season with salt, pepper, and dried oregano. Cook the shrimp for about 2-3 minutes on each side or until they turn pink and are cooked through. Once done, remove the shrimp from the skillet and place them on a plate.
  • Step 3: Make the Creamy Sauce. Using the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Next, add the lemon juice, stirring well to combine, and scrape up any bits from the bottom of the pan. Then, add in about half of the reserved pasta water and let it simmer for a minute.
  • Step 4: Combine and Serve. Return the cooked shrimp to the skillet along with the drained pasta. Toss everything together, adding more reserved pasta water as needed to create a creamy consistency. Make sure the pasta is well coated with the sauce. Taste and adjust the seasoning with additional salt and pepper if necessary.
  • Step 5: Garnish and Enjoy. Once everything is combined and heated through, remove from heat. Serve the Creamy Greek Shrimp Pasta warm, garnished with fresh parsley and, if desired, a sprinkle of Parmesan cheese.
