  • 12 ounces medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 whole lemon, juiced
  • 3 cloves garlic, minced

  • 8 ounces pasta (spaghetti, penne, or fusilli)
  • 1 cup heavy cream or a dairy-free alternative
  • 1/2 cup feta cheese, crumbled
  • for garnish Fresh parsley or dill

Instructions

  • Step 1: Cook the Pasta - Boil a large pot of salted water. Add pasta and cook until al dente. Drain and reserve half a cup of pasta water.
  • Step 2: Sauté the Shrimp - Heat olive oil in a skillet. Add shrimp, season with salt, pepper, and oregano. Sauté until pink and cooked through, about 2-3 minutes per side. Remove and set aside.
  • Step 3: Create the Creamy Sauce - In the same skillet, sauté garlic until fragrant. Add heavy cream and lemon juice, simmer for 2-3 minutes until thickened.
  • Step 4: Combine Pasta and Shrimp - Add cooked pasta and shrimp back to the skillet. Toss to coat in the sauce, adding reserved pasta water if needed.
  • Step 5: Add Feta and Garnish - Remove from heat, fold in feta cheese, and serve garnished with parsley or dill.

Notes
