Ingredients

  • 2 chicken breasts sliced
  • 2 tablespoons olive oil
  • 1 cup mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • fresh parsley chopped for garnish

Instructions

Step 1: Prepare the Chicken

  • Pat the chicken breasts dry and slice them into even strips about 1/2-inch thick. This helps the chicken cook quickly and absorb the sauce better.

Step 2: Sear the Chicken

  • Heat the olive oil over medium-high heat in a large skillet. Once hot, add the sliced chicken breasts in a single layer. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3: Sauté Mushrooms and Garlic

  • In the same skillet, add the sliced mushrooms. Sauté for 4-5 minutes until they soften and release their juices. Add the minced garlic and cook for another 30 seconds until fragrant, stirring constantly to avoid burning.

Step 4: Make the Cream Sauce

  • Pour in the chicken broth and heavy cream, scraping the bottom of the pan to loosen any browned bits. Stir in the Italian seasoning, then bring the mixture to a gentle simmer. Let it cook for 3-4 minutes until the sauce thickens slightly.

Step 5: Combine and Simmer

  • Return the cooked chicken to the skillet, nestling it into the creamy mushroom sauce. Season with salt and pepper to taste. Let everything simmer together for 2-3 minutes, allowing the chicken to soak up the flavors.

Step 6: Garnish and Serve

  • Sprinkle fresh chopped parsley over the top for a bright, herbaceous finish. Serve immediately with your choice of sides such as mashed potatoes, steamed rice, or buttered egg noodles.

Equipment

  • Large skillet or sauté pan
  • Sharp Knife
  • Cutting Board
  • Wooden Spoon or Spatula
  • Measuring cups and spoons

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently to prevent sauce separation.
  • Substitute chicken breasts with boneless, skinless chicken thighs for a juicier texture.
  • Use half-and-half or coconut cream instead of heavy cream for a lighter or dairy-free option.
