Ingredients

  • 12 oz cheese tortellini fresh or frozen
  • 1 lb shrimp peeled and deveined, medium-sized
  • 2 tbsp olive oil for sautéing and adding flavor
  • 1 bell pepper diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream for sauce base
  • 1 cup chicken broth for sauce
  • 1 cup shredded cheddar cheese sharp and melty

  • 2 tbsp Cajun seasoning divided

Instructions

Step 1: Cook the Tortellini

  • Bring a large pot of salted water to a boil. Add 12 oz of cheese tortellini and cook according to package instructions, about 3-5 minutes until al dente. Drain and set aside.

Step 2: Sauté Shrimp and Vegetables

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add peeled and deveined shrimp, season with 1 tablespoon Cajun seasoning, salt, and pepper. Cook 2 minutes per side until shrimp turn pink and opaque. Remove shrimp and set aside.
  • In the same skillet, add diced bell pepper, chopped onion, and minced garlic. Sauté for 4-5 minutes until softened and fragrant.

Step 3: Make the Creamy Sauce

  • Lower heat to medium. Pour in 1 cup heavy cream and 1 cup chicken broth. Stir in remaining 1 tablespoon Cajun seasoning. Simmer gently for 3-4 minutes until slightly thickened. Season with salt and pepper to taste.

Step 4: Combine and Assemble

  • Add cooked tortellini and shrimp to skillet with sauce and vegetables. Stir gently to coat evenly. Transfer mixture into prepared oven-safe baking dish. Sprinkle 1 cup shredded cheddar cheese and 1 cup shredded mozzarella evenly over top.

Step 5: Bake to Perfection

  • Preheat oven to 375°F (190°C). Bake uncovered for 15-20 minutes until cheese is melted, bubbly, and golden brown. Garnish with freshly chopped parsley before serving.
