Ingredients

Cranberry Mixture

  • 1.5 cups Cranberries (fresh or frozen)
  • 0.125 cups Water
  • 0.25 cups Granulated Sugar For the cranberry mixture
  • 0.5 tsp Ground Cinnamon

Batter

  • 0.5 cups Fresh Pomegranate Seeds
  • 0.5 cups Unsalted Butter, melted
  • 1 cups Granulated Sugar For the batter
  • 1 cups Self-Rising Flour
  • 1 cups Buttermilk
  • 0.33 cups Dark Chocolate Chunks or Chips

Garnish

  • Sparkling Sugar Optional, for garnish

Instructions

  • Step 1: Prepare the Cranberry Mixture. Combine cranberries, water, ¼ cup of granulated sugar, and ground cinnamon in a medium saucepan. Simmer over medium heat until the berries burst and the mixture thickens, about 5-7 minutes. Remove from heat and cool slightly before adding pomegranate seeds.
  • Step 2: Make the Batter. In a large mixing bowl, combine melted butter with 1 cup of granulated sugar. Slowly add self-rising flour and buttermilk, mixing gently until just combined. Fold in dark chocolate chunks.
  • Step 3: Assemble the Cobbler. Preheat oven to 350°F (175°C). Pour batter into a greased 9x13-inch baking dish. Spoon cranberry-pomegranate mixture over the top without stirring.
  • Step 4: Bake to Perfection. Bake for 40-45 minutes until golden brown and a toothpick comes out clean. The edges should be crispy while the center remains soft.
  • Step 5: Add The Final Touches. Allow to cool for 10-15 minutes. Optionally, sprinkle with sparkling sugar before serving warm with ice cream or whipped cream.

Notes

For a sweeter cobbler, add more sugar to the cranberry mixture. Letting the cobbler cool slightly before serving will make it easier to cut.
