  • 1 tablespoon orange zest, grated

  • ¼ cup butter, melted
  • 1 cup white sugar plus 1 tablespoon for cranberries
  • 1 large egg
  • ¾ cup orange juice
  • 1 cup fresh cranberries, chopped

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Grease a 9×5-inch loaf pan with butter or non-stick spray.
  • Step 3: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and orange zest.
  • Step 4: In a small bowl, combine the chopped cranberries with 1 tablespoon of sugar.
  • Step 5: In a separate bowl, combine the melted butter, 1 cup of sugar, and the egg. Beat until well combined, then add the orange juice and stir until smooth.
  • Step 6: Pour the wet mixture into the dry ingredients and mix until just combined.
  • Step 7: Gently fold in the sugared cranberries into the batter.
  • Step 8: Transfer the batter into the prepared loaf pan and spread it evenly.
