In the mixing bowl with the corn, add the chopped red onion, jalapeño, and red bell pepper. Stir gently to combine.
Add the fresh lime juice and minced garlic to the bowl. Toss in the chopped cilantro and season with sea salt to taste.
Mix everything well and cover with plastic wrap. Let it chill in the refrigerator for at least 30 minutes.
