  • 2 15-oz cans Canned Whole Corn Kernels drained
  • 3/4 cup Red Onion finely chopped
  • 1 large Jalapeño seeded and chopped
  • 1 Red Bell Pepper chopped
  • 4 tablespoons Fresh Lime Juice
  • 2 cloves Garlic minced
  • 1 handful Fresh Cilantro chopped
  • Sea Salt to taste

  • Begin by draining the canned corn kernels and placing them in a large mixing bowl. Finely chop the red onion, jalapeño, and red bell pepper. If using cilantro, chop it as well. Set aside.
  • In the mixing bowl with the corn, add the chopped red onion, jalapeño, and red bell pepper. Stir gently to combine.
  • Add the fresh lime juice and minced garlic to the bowl. Toss in the chopped cilantro and season with sea salt to taste.
  • Mix everything well and cover with plastic wrap. Let it chill in the refrigerator for at least 30 minutes.
  • Once chilled, stir before serving. Enjoy with tortilla chips, on tacos, or as a side dish.
