Start by gathering all your ingredients. Chop your onions finely and set them aside. If you’re using refrigerated sauerkraut, you can warm it in a small saucepan over low heat to bring out its flavors.
Preheat your grill or stovetop pan over medium heat. Place the beef frankfurters on the grill, turning occasionally, until they are heated through and have nice grill marks, around 5 to 7 minutes. If you prefer a stovetop method, you can boil them in water for about 5 minutes before transferring them to a hot pan to sear.
Once the frankfurters are nearly done, you can add the hot dog buns to the grill or pan. Toast them for about 1-2 minutes until they are warm and slightly crispy on the outside.
Place each grilled frankfurter into a toasted bun. Top generously with warm sauerkraut, followed by a heap of chopped onions. Finally, drizzle with spicy brown mustard to finish off your classic Coney Island hot dog.
