  • 3 tablespoons Olive Oil
  • 2 tablespoons Honey
  • 2 tablespoons Champagne Vinegar
  • ½ teaspoon Dijon Mustard
  • 1 teaspoon Minced Shallot
  • Salt and Pepper To taste.

Instructions

  • Step 1: Wash the spinach thoroughly under cold water, shake off excess water, and chop into bite-sized pieces. Place in a large salad bowl.
  • Step 2: Peel the mango and dice it into small pieces. Set aside.
  • Step 3: Sprinkle the pomegranate seeds over the chopped spinach in the salad bowl.
  • Step 4: Crumble the gorgonzola cheese over the salad mixture.
  • Step 5: In a small bowl, whisk together the pomegranate juice, olive oil, honey, champagne vinegar, Dijon mustard, and minced shallot. Season with salt and pepper to taste.
  • Step 6: Drizzle the dressing over the salad and toss gently to coat.
