Ingredients

  • 4-4.5 pounds beef brisket well-marbled
  • 3 tablespoons brown sugar
  • 2 tablespoons smoked paprika (or sweet paprika + 2 tsp liquid smoke)
  • 1 tablespoon salt
  • 1.5 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 18 ounces spicy BBQ sauce (Texas-style)
  • 8 sandwich rolls brioche buns soft
  • 1 cup sliced dill pickles

Instructions

Preparation

  • In a small bowl, combine the brown sugar, smoked paprika, salt, ground cumin, cayenne pepper, garlic powder, onion powder, and black pepper. Mix well until all the spices are evenly combined.
  • Rub the spice mixture generously over the entire surface of the brisket. Make sure to coat it well for maximum flavor. Allow the brisket to sit for at least 30 minutes to let the spices penetrate the meat.

Cooking

  • If using a slow cooker, place the brisket in the cooker and pour half of the BBQ sauce over the top. Cover and cook on low for 8-10 hours, or until the meat is tender and easily shreds with a fork. If using a smoker, smoke the brisket at 225°F for about 1.5 hours per pound, basting occasionally with the BBQ sauce.
  • Once cooked, remove the brisket from the cooker or smoker and let it rest for about 20 minutes. This resting time is crucial for allowing the juices to redistribute. Use a sharp knife to chop the brisket into bite-sized pieces.
  • In a large bowl, toss the chopped brisket with the remaining BBQ sauce. Make sure the meat is well coated with sauce for maximum flavor.

Assembly

  • To assemble your sandwiches, place a generous portion of the chopped brisket on the bottom half of each sandwich roll. Top with sliced dill pickles, then place the top half of the roll on top. Press down gently to hold everything together.
