Ingredients

For the Salad:

  • 5 oz pre-washed lettuce
  • 1/4 head red cabbage shredded
  • 1/2 lb chicken cooked and shredded
  • 1 each red pepper diced
  • 4 each scallions sliced
  • 1 can mandarin oranges drained
  • 1/2 cup chow mein noodles

For the Dressing:

  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 3 tablespoons canola oil

  • Start by shredding the cooked chicken into bite-sized pieces. If you have leftover rotisserie chicken, this is the perfect way to use it!
  • Dice the red pepper, slice the scallions, and shred the red cabbage. These fresh ingredients will add a beautiful crunch and vibrant color to your salad.
  • In a small bowl, combine minced garlic, grated ginger, brown sugar, sesame oil, soy sauce, white vinegar, and canola oil. Whisk together until the sugar is fully dissolved and the dressing is well mixed.
  • In a large mixing bowl, combine the pre-washed lettuce, shredded cabbage, diced red pepper, sliced scallions, and shredded chicken. Pour the dressing over the top and toss everything together until well coated.
  • Gently fold in the drained mandarin oranges and chow mein noodles for that delightful crunch. Be careful not to break the oranges!
  • Spoon the salad into bowls and serve immediately. Enjoy the burst of flavors with every bite!
