Ingredients

For the Blondies:

  • 1 can chickpeas or 1 1/2 cups cooked chickpeas or white beans
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3/4 cup granulated sugar of your choice (coconut sugar or brown sugar work well too!)
  • 1/3 cup flour (white, oat, spelt, sorghum, or 1/2 cup almond flour)
  • 1/4 cup applesauce or mashed banana or yogurt
  • 3 tbsp oil or 1/4 cup nut butter (like almond or peanut butter)
  • 1/2 cup chocolate chips or more if desired

How to Make Chickpea Blondies:

  • Step 1: Prepare Your Ingredients. Start by gathering all your ingredients. If you’re using canned chickpeas, make sure to drain and rinse them well.
  • Step 2: Blend the Chickpeas. In a food processor, add the chickpeas, applesauce (or your chosen substitute), oil (or nut butter), and blend until the mixture is completely smooth and creamy.
  • Step 3: Combine Dry Ingredients. In a mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
  • Step 4: Mix Wet and Dry Ingredients. Pour the blended chickpea mixture into the bowl with the dry ingredients. Add in the granulated sugar and mix until just combined.
  • Step 5: Fold in the Chocolate Chips. Gently fold in the chocolate chips (and any other mix-ins you desire) until they’re evenly distributed throughout the batter.
  • Step 6: Bake. Preheat your oven to 350°F (175°C). Line your 9x9 inch baking pan with parchment paper and pour the batter into the pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Step 7: Cool and Slice. Once baked, allow the blondies to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack. Slice into squares and enjoy your delicious Chickpea Blondies!
