Ingredients

For the Chicken Marinade:

  • 3 tablespoons oil for the marinade Olive oil or avocado oil

  • 3 tablespoons taco seasoning
  • 1 pound boneless skinless chicken breast The star of the show!

For the Spicy Mayo:

  • 1 tablespoon lime juice Freshens up the flavors

For Assembly:

  • 1 head iceberg lettuce finely shredded
  • 1 tomato sliced Juicy and vibrant
  • ½ cup guacamole Creamy and rich
  • ½ cup cilantro leaves Adds freshness

Instructions

From Start to Finish:

  • Step 1: Marinate the Chicken - In a mixing bowl, whisk together the oil, lime juice, lime zest, and taco seasoning. Add the chicken and marinate for at least 30 minutes.
  • Step 2: Cook the Chicken - Heat oil in a skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side until cooked through. Let rest before slicing.
  • Step 3: Prepare the Spicy Mayo - Mix mayonnaise, chipotle sauce, lime juice, agave, and salt in a small bowl. Adjust spice level to taste.
  • Step 4: Toast the Bolillo Rolls - Slice and toast the bolillo rolls in the skillet until golden brown.
  • Step 5: Assemble the Tortas - Spread spicy mayo on each roll, layer with chicken, lettuce, tomato, guacamole, and cilantro. Top with the other half of the roll.
  • Step 6: Serve and Enjoy! - Serve immediately with lime wedges. Enjoy fresh!
