Ingredients

  • 1 tablespoon vegetable oil for sautéing the chicken and vegetables
  • 1 pound boneless skinless chicken breasts cut into 1-inch pieces
  • 2 cups fresh green beans trimmed
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/4 cup low-sodium soy sauce for umami essence
  • 1 tablespoon oyster sauce adding richness to the sauce
  • 1 tablespoon rice vinegar for a hint of acidity
  • 1 teaspoon sugar balancing the savory notes
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water

Instructions

  • Start by cutting the chicken breasts into 1-inch pieces. Trim the green beans and mince the garlic and ginger. Having everything ready will make the cooking process seamless.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Make sure the oil is hot but not smoking, as this will ensure a nice sear on the chicken.
  • Add the chicken pieces to the skillet in a single layer. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Stir occasionally to ensure even cooking.
  • Once the chicken is cooked, add the minced garlic and ginger to the skillet. Stir for about 30 seconds until fragrant—this is where the magic begins!
  • Add the trimmed green beans and stir-fry for another 3-4 minutes, or until the beans are tender-crisp. You want them to retain their vibrant color and crunch.
  • In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, rice vinegar, sugar, and the cornstarch mixed with water. Pour this mixture over the chicken and green beans in the skillet.
  • Stir well to coat everything in the sauce. Cook for an additional 1-2 minutes until the sauce thickens slightly and everything is heated through.
  • Remove the skillet from heat and serve your Chicken And Green Bean Stir-Fry immediately. Pair it with steamed rice or noodles for a complete meal!
