Ingredients

Olives and Giardiniera

  • 1.5 cups Spanish Green Olives, chopped
  • 0.5 cup Pitted Kalamata Olives, chopped
  • 1 cup Giardiniera, chopped
  • 2 cloves Fresh Garlic, minced
  • 1 tbsp Italian Parsley, finely chopped
  • 3 tbsp Red Wine Vinegar
  • Kosher Salt & Freshly Ground Pepper, to taste Salt may not be necessary
  • 1.5 cups Olive Oil
  • 8 oz Cream Cheese, softened
  • 2 cups Shredded Italian Style Cheese (mozzarella, provolone)

Instructions

  • Step 1: Prepare the Olives and Giardiniera. Begin by chopping the Spanish green olives, Kalamata olives, and giardiniera into small pieces.
  • Step 2: Mixing the Ingredients. In a large mixing bowl, combine the chopped olives and giardiniera with the minced garlic and finely chopped Italian parsley. Add the grape juice vinegar, a drizzle of olive oil, and season with kosher salt and freshly ground pepper. Stir to combine.
  • Step 3: Cream Cheese Base. In a separate bowl, mix the softened cream cheese until smooth. Add a tablespoon of olive oil if needed to loosen it up.
  • Step 4: Combine Everything. Gradually fold the olive mixture into the cream cheese mixture, being careful not to over-mix. Stir in the shredded Italian-style cheese until evenly distributed.
  • Step 5: Chill and Serve. Transfer the dip to a serving dish, cover with plastic wrap, and let it chill in the refrigerator for at least an hour before serving.
