Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts

Sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter, melted
  • ½ cup hot sauce (Frank’s Red Hot recommended)

Cheese

  • ½ cup shredded mozzarella cheese
  • ½ cup blue cheese crumbles

Wonton Wrappers

  • 30 pieces wonton wrappers

Garnish

  • to taste scallions, finely chopped for garnish

Seasoning

  • to taste salt and pepper

Instructions

  • Step 1: Preheat your oven to 375°F (190°C). In a medium pot, add the chicken breasts and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cooked. Shred the chicken.
  • Step 2: In a mixing bowl, combine shredded chicken, melted butter, and hot sauce. Add salt and pepper to taste.
  • Step 3: Grease a muffin tin. Press wonton wrappers into the molds to form cups. Fill each cup with the buffalo chicken mixture and top with mozzarella and blue cheese.
  • Step 4: Bake for 15-20 minutes until wontons are crispy and cheese is melted. Watch closely to avoid burning.
  • Step 5: Allow to cool slightly, garnish with scallions, and serve warm.

Notes
