  • 3/4 cup raw cashews or macadamia nuts (unsalted)
  • 2/3 cup water
  • 1 tsp onion powder
  • 3/4 tsp salt
  • 8 oz pasta or vegetables of choice (optional)

  • Step 1: Soak the Nuts. Start by soaking your cashews or macadamia nuts in water for at least 2 hours. If you’re short on time, a quick soak in hot water for 15-30 minutes works too.
  • Step 2: Blend the Ingredients. Drain and rinse the soaked nuts, then add them to your high-speed blender along with 2/3 cup water, 1 teaspoon onion powder, and 3/4 teaspoon salt. Blend until completely smooth and creamy.
  • Step 3: Taste and Adjust. After blending, taste your sauce. Adjust the salt if necessary or add additional water for a thinner consistency. Blend again if you make any adjustments.
  • Step 4: Heat the Sauce. Transfer the blended Cashew Alfredo Sauce to a saucepan over medium heat. Stir occasionally and heat until warmed through, about 5 minutes.
  • Step 5: Serve and Enjoy. If using with pasta, cook your pasta according to package instructions. Drain and mix the hot pasta with the Cashew Alfredo Sauce. For vegetables, simply steam or sauté them and toss with the sauce.
