Ingredients

  • 1 package cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1/4 cup fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • cooked and chopped turkey bacon optional, for added savory flavor

Instructions

Step 1: Cook the Cheese Tortellini

  • Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes until they float to the surface and are tender. Drain the tortellini and rinse briefly with cold water to stop the cooking process and cool them down. Set aside.

Step 2: Prepare the Ingredients

  • While the tortellini cooks, halve the cherry tomatoes and drain the fresh mozzarella balls. Tear the basil leaves into smaller pieces if they are large, or leave them whole if they’re small. If you’re including the turkey bacon, cook it until crispy, let it cool, then chop it into bite-sized pieces.

Step 3: Assemble the Skewers

  • Using wooden or metal skewers, thread the ingredients in this order: one cheese tortellini, one cherry tomato half, one mozzarella ball, and one basil leaf. Repeat the sequence or add additional pieces depending on the skewer length, making sure to balance the colors and textures visually.

Step 4: Make the Dressing

  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Adjust seasoning to your taste. This simple dressing enhances the natural flavors without overpowering the fresh ingredients.

Step 5: Drizzle and Serve

  • Place the assembled skewers on a serving platter, then lightly drizzle the olive oil and balsamic dressing over the top. If you’d like, sprinkle the chopped turkey bacon over the skewers for a smoky touch. Serve immediately or chill briefly before serving.

Equipment

  • Large Pot
  • Colander
  • Small Bowl
  • Skewers

Notes

  • Do not overcook the tortellini to avoid mushy skewers; rinse with cold water after boiling.
  • Tear large basil leaves into smaller pieces for better flavor balance.
  • Prepare skewers close to serving time to prevent sogginess.
  • Keep the dressing separate and drizzle just before serving for best results.
  • Customize with proteins like grilled chicken or vegan alternatives for variety.
