Ingredients

For the Cheesecake Bars:

  • 1 package yellow cake mix
  • 1 box instant butterscotch pudding mix (3.4-ounce)
  • 1/3 cup vegetable oil
  • 2 large eggs, divided
  • 1 package cream cheese, softened (8-ounce)
  • 1/3 cup sugar
  • 1 cup brickle toffee bits, divided
  • 1/2 cup butterscotch chips make sure to use a halal version

Instructions

Directions:

  • Step 1: Preheat your oven to 350°F (175°C). This ensures your cheesecake bars bake evenly.
  • Step 2: In a large mixing bowl, combine the yellow cake mix, instant butterscotch pudding mix, vegetable oil, and 1 beaten egg. Mix until well combined. The batter will be thick.
  • Step 3: Spread the cake batter evenly into the bottom of a greased 9x13 inch baking pan. Use a spatula to ensure an even layer.
  • Step 4: In another bowl, beat the softened cream cheese until smooth. Gradually add the sugar and remaining egg, mixing until fully combined and creamy.
  • Step 5: Fold in 3/4 cup of the brickle toffee bits and the butterscotch chips into the cream cheese mixture. This adds delicious texture and flavor to the cheesecake layer.
  • Step 6: Pour the cream cheese mixture over the cake crust in the baking pan. Spread it evenly to cover the crust.
  • Step 7: Bake in the preheated oven for 25-30 minutes or until the edges are lightly golden and the center is set. A toothpick inserted into the center should come out mostly clean.
  • Step 8: Remove from the oven and sprinkle the remaining 1/4 cup of toffee bits on top. Allow the bars to cool in the pan at room temperature.
  • Step 9: Once cooled, refrigerate the bars for at least 2 hours before slicing. This helps the flavors meld and makes them easier to cut.
