Ingredients

  • 2 cups cooked and cooled quinoa
  • 1 cup broccoli florets steamed and chopped
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Nonstick cooking spray or olive oil for frying

Instructions

  • Begin by ensuring that your quinoa is cooked and cooled. If you need to cook it, rinse 1 cup of quinoa under cold water, then cook it according to package instructions. Once done, let it cool completely.
  • While the quinoa is cooling, steam the broccoli florets until they are tender but still vibrant green. This usually takes about 3-4 minutes. Once steamed, chop them into small pieces.
  • In a large mixing bowl, combine the cooked quinoa, chopped broccoli, beaten eggs, panko breadcrumbs, shredded cheddar cheese, sliced green onions, minced garlic, kosher salt, and black pepper. Stir until everything is evenly mixed.
  • Using your hands, scoop out a handful of the mixture and form it into patties. Aim for about 2-3 inches in diameter. Place the formed fritters on a plate.
  • In a skillet over medium heat, add a drizzle of olive oil or spray with nonstick cooking spray. Allow the oil to heat up before adding the fritters.
  • Carefully place the fritters in the skillet, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until they are golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
  • These Broccoli Cheddar Fritters are best served warm. Pair them with a dipping sauce like ranch or a tangy yogurt sauce for an extra flavor boost!
