Breakfast Popsicles

Ingredients

  • 1 cup full-fat plain Greek yogurt
  • ½ cup nonfat milk (or use a milk alternative)
  • 3 tablespoons honey (can sub maple syrup)
  • 2 tablespoons chia seeds
  • ½ cup fresh blueberries
  • 2 medium kiwi (peeled and sliced)
  • ½ cup fresh strawberries (sliced)

Instructions

  • Start by gathering all your ingredients. Wash the blueberries, peel and slice the kiwi, and slice the strawberries. This will make the blending process much smoother.
  • In a mixing bowl, combine the full-fat plain Greek yogurt, nonfat milk, and honey (or maple syrup). Use a whisk to mix them until smooth. If you prefer a sweeter taste, feel free to adjust the amount of honey or syrup.
  • Stir in the chia seeds, ensuring they are evenly distributed throughout the yogurt mixture. Let it sit for about 5 minutes, allowing the chia seeds to absorb some liquid and expand.
  • In your popsicle molds, start by placing a layer of blueberries at the bottom. Next, pour a layer of the yogurt mixture over the blueberries. Follow with a layer of sliced kiwi, then more yogurt, and finally top with sliced strawberries. Repeat the layers until the molds are full, leaving a little space at the top for expansion as they freeze.
  • Insert the popsicle sticks into the molds. If your molds have a lid, secure it. Place the molds in the freezer for at least 4-6 hours, or until completely frozen.
  • To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. Serve immediately or store in a freezer-safe bag for later enjoyment!
