Start by gathering all your ingredients. Wash the blueberries, peel and slice the kiwi, and slice the strawberries. This will make the blending process much smoother.
In a mixing bowl, combine the full-fat plain Greek yogurt, nonfat milk, and honey (or maple syrup). Use a whisk to mix them until smooth. If you prefer a sweeter taste, feel free to adjust the amount of honey or syrup.
Stir in the chia seeds, ensuring they are evenly distributed throughout the yogurt mixture. Let it sit for about 5 minutes, allowing the chia seeds to absorb some liquid and expand.
In your popsicle molds, start by placing a layer of blueberries at the bottom. Next, pour a layer of the yogurt mixture over the blueberries. Follow with a layer of sliced kiwi, then more yogurt, and finally top with sliced strawberries. Repeat the layers until the molds are full, leaving a little space at the top for expansion as they freeze.
Insert the popsicle sticks into the molds. If your molds have a lid, secure it. Place the molds in the freezer for at least 4-6 hours, or until completely frozen.
To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. Serve immediately or store in a freezer-safe bag for later enjoyment!
