Instructions
Step 1: Rinse the endive leaves under cold water and pat them dry. Arrange on a serving platter.
Step 2: In a mixing bowl, combine Greek yogurt and mayonnaise until smooth. Add Parmesan cheese and mix well.
Step 3: Stir in chopped green onion and a pinch of salt until evenly incorporated.
Step 4: Gently fold in crispy bacon crumbles and chopped tomatoes into the creamy filling.
Step 5: Fill each endive leaf with the creamy filling, about 1 to 2 tablespoons per leaf.
Step 6: Chill in the refrigerator for 15-20 minutes before serving.
