Ingredients

Endive Leaves

  • 10 leaves Endive Select larger outer leaves for filling.

Creamy Filling

  • 1/4 cup Non-fat plain Greek yogurt
  • 1/4 cup Mayonnaise
  • 1/3 cup Grated Parmesan cheese
  • 1/4 cup Chopped green onion
  • 1 pinch Salt
  • 3/4 cup Crispy bacon crumbles Use pre-cooked for convenience.
  • 1/3 cup Chopped tomatoes

Instructions

  • Step 1: Rinse the endive leaves under cold water and pat them dry. Arrange on a serving platter.
  • Step 2: In a mixing bowl, combine Greek yogurt and mayonnaise until smooth. Add Parmesan cheese and mix well.
  • Step 3: Stir in chopped green onion and a pinch of salt until evenly incorporated.
  • Step 4: Gently fold in crispy bacon crumbles and chopped tomatoes into the creamy filling.
  • Step 5: Fill each endive leaf with the creamy filling, about 1 to 2 tablespoons per leaf.
  • Step 6: Chill in the refrigerator for 15-20 minutes before serving.

Notes
