  • ¼ cup butter
  • 6 ounces amen noodles, crumbled
  • 2 cups hot water
  • ½ cup beef broth
  • 1 cup white rice
  • ¼ cup canned black beans, drained & rinsed
  • 1 tbsp onion flakes
  • 2 tsp granulated garlic
  • 1 cup freeze-dried bell peppers
  • Salt and pepper to taste

Instructions

  • Step 1: In a large saucepan, melt the butter over medium heat. Once melted and bubbling, add the crumbled amen noodles and sauté them for 3-4 minutes until they turn golden brown.
  • Step 2: Carefully pour in the hot water and beef broth. Stir well to combine.
  • Step 3: Add the white rice, along with a touch of salt and pepper to taste. Stir gently to ensure the rice is evenly distributed.
  • Step 4: Sprinkle in the onion flakes and granulated garlic. Stir again to combine everything well.
  • Step 5: Stir in the freeze-dried bell peppers. They will plump up beautifully as the pilaf cooks.
  • Step 6: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan and let it simmer for about 18-20 minutes.
  • Step 7: Once the rice is cooked, gently fluff it with a fork and fold in the black beans.
  • Step 8: Taste your pilaf and adjust the seasoning if necessary. Serve warm, garnished with fresh herbs or a squeeze of lime.
