Ingredients

  • 2 pounds potatoes, Russet or Yukon Gold
  • 1 tablespoon olive or avocado oil
  • 3-4 cloves garlic, minced
  • 3-4 tablespoons cilantro or parsley, minced
  • 2-3 tablespoons dill, minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika or red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Lemon wedges for serving

Instructions

  • Preheat your oven to 425°F (220°C). This high temperature is key to achieving perfectly crispy potatoes.
  • Wash and peel the potatoes. Cut them into bite-sized cubes, about 1-2 inches in size. Uniform pieces will ensure even cooking.
  • In a large mixing bowl, combine the minced garlic, olive or avocado oil, ground cumin, ground coriander, smoked paprika or red pepper flakes, salt, and black pepper. Mix well to create a fragrant paste.
  • Add the cubed potatoes to the bowl with the spice mix. Toss everything together until the potatoes are well coated in the mixture.
  • Spread the seasoned potatoes out in a single layer on a baking sheet. Make sure they are not overcrowded to allow for even roasting. Place the baking sheet in the preheated oven.
  • After about 20 minutes, remove the baking sheet from the oven and use a spatula to flip the potatoes. Return them to the oven and roast for an additional 15-20 minutes until they are golden brown and crispy.
  • Once the potatoes are done roasting, remove them from the oven and immediately toss with the minced cilantro or parsley, and dill if using. This will add a fresh, vibrant flavor to the dish.
  • Serve the Batata Harra hot, garnished with lemon wedges for a zesty kick. Enjoy them as a side dish or snack!
