Preheat your oven to 425°F (220°C). This high temperature is key to achieving perfectly crispy potatoes.
Wash and peel the potatoes. Cut them into bite-sized cubes, about 1-2 inches in size. Uniform pieces will ensure even cooking.
In a large mixing bowl, combine the minced garlic, olive or avocado oil, ground cumin, ground coriander, smoked paprika or red pepper flakes, salt, and black pepper. Mix well to create a fragrant paste.
Add the cubed potatoes to the bowl with the spice mix. Toss everything together until the potatoes are well coated in the mixture.
Spread the seasoned potatoes out in a single layer on a baking sheet. Make sure they are not overcrowded to allow for even roasting. Place the baking sheet in the preheated oven.
After about 20 minutes, remove the baking sheet from the oven and use a spatula to flip the potatoes. Return them to the oven and roast for an additional 15-20 minutes until they are golden brown and crispy.
Once the potatoes are done roasting, remove them from the oven and immediately toss with the minced cilantro or parsley, and dill if using. This will add a fresh, vibrant flavor to the dish.
Serve the Batata Harra hot, garnished with lemon wedges for a zesty kick. Enjoy them as a side dish or snack!
