Ingredients

Shrimp

  • 40 small shrimp, peeled and deveined

Basil Pesto

  • 2 cups fresh basil leaves packed
  • 1/2 lime Juice from
  • 2 cloves garlic, minced
  • 1/4 cup pine nuts
  • 2/3 cup olive oil
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon fine sea salt
  • 1 teaspoon pepper

Skewers

  • 8 pieces wooden skewers, soaked in water for at least 15 minutes

Instructions

  • Step 1: Prepare the Marinade - In a food processor, combine the fresh basil leaves, lime juice, minced garlic, pine nuts, olive oil, parmesan cheese, sea salt, and pepper. Blend until smooth and creamy.
  • Step 2: Marinate the Shrimp - In a large bowl, place the peeled and deveined shrimp. Pour the basil pesto over the shrimp, mixing well to coat. Allow to marinate for at least 30 minutes.
  • Step 3: Assemble the Skewers - Thread about 5 shrimp onto each wooden skewer, leaving space between each shrimp.
  • Step 4: Preheat the Grill - Preheat your grill to medium-high heat.
  • Step 5: Grill the Shrimp Skewers - Place the shrimp skewers on the grill and cook for about 2-3 minutes per side, until the shrimp turn pink and opaque.
  • Step 6: Serve and Enjoy! - Remove the skewers from the grill and let them rest for a minute. Serve warm with leftover basil pesto or lime wedges.
