Ingredients

Chicken Mixture

  • 2.5 cups chopped rotisserie chicken From one store-bought rotisserie chicken
  • cup barbecue sauce
  • 1.75 cups sharp Cheddar cheese, shredded
  • cup freshly sliced scallions
  • Salt and pepper To taste

Breading Ingredients

  • 1 cup all-purpose flour
  • 3 large eggs, lightly beaten
  • 2 cups panko bread crumbs
  • Oil for frying Preferably canola or vegetable oil

Instructions

  • Step 1: In a large mixing bowl, combine the chopped chicken with the barbecue sauce, shredded cheese, and scallions. Mix well and season with salt and pepper.
  • Step 2: Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko bread crumbs.
  • Step 3: Take small portions of the chicken mixture and shape them into small balls or patties, aiming for about 24 poppers.
  • Step 4: Coat each chicken ball in flour, dip in beaten eggs, and roll in panko bread crumbs.
  • Step 5: Heat oil in a deep skillet over medium-high heat. Fry the poppers for 3-4 minutes on each side until golden brown.
  • Step 6: Serve warm with extra barbecue sauce for dipping.
