Instructions
Step 1: Start by shredding the rotisserie chicken. You can use your hands or two forks to pull apart the meat, discarding any bones and skin. Place the shredded chicken into a large mixing bowl.
Step 2: Slice the bell peppers into thin strips, seed and dice the large tomato, and chop the green onions and cilantro.
Step 3: Add the chopped green onions, fresh cilantro, red pepper strips, yellow pepper strips, and diced tomato to the bowl with the shredded chicken.
Step 4: In a small skillet over medium heat, toast the sesame seeds for about 2-3 minutes until they turn light golden brown and fragrant.
Step 5: Drizzle the balsamic dressing over the chicken and vegetable mixture. Toss everything together gently until well combined.
Step 6: Serve immediately or let it chill in the fridge for about 30 minutes before serving. Sprinkle toasted sesame seeds on top just before serving.
