Instructions
Step 1: Prepare the Chicken. Grill or pan-sear the chicken breast until fully cooked, season with salt and pepper, then cube.
Step 2: Combine the Ingredients. In a large mixing bowl, combine the cubed chicken, apple, cranberries, feta, walnuts, and red onion.
Step 3: Make the Dressing. Whisk together mayonnaise, balsamic vinegar, sugar, salt, and pepper in a separate bowl.
Step 4: Mix It All Together. Pour the dressing over the chicken salad mixture and gently fold until coated.
Step 5: Assemble the Sandwiches. Slice pretzel rolls in half, scoop chicken salad onto the bottom half, and top with the other half.
