Ingredients

  • 3 medium zucchini (cut into sticks)
  • 1 cup breadcrumbs (Panko for extra crunch)
  • 1/2 cup Parmesan cheese (grated)
  • 1 whole egg
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)

Instructions

  • Preheat your oven to 425°F (220°C) to achieve a crispy texture.
  • Wash the zucchini, cut off the ends, and slice into sticks about ½ inch thick for even cooking.
  • In one bowl, whisk the egg. In another, combine Panko breadcrumbs, grated Parmesan, salt, and pepper.
  • Dip each zucchini stick into the egg mixture, then roll in the breadcrumb mixture until fully coated. Place on a baking sheet.
  • Bake the zucchini sticks for about 20-25 minutes or until golden brown and crispy, turning halfway through.
  • Let them cool for a few minutes before serving. Enjoy with ranch dressing!
