Ingredients

Avocados

  • 4 pieces ripe avocados Choose ripe but firm avocados.

Breading Ingredients

  • ½ cup coconut flour
  • 3 large eggs, beaten
  • 1 cup almond meal
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound bacon strips, cut in half Use high-quality bacon for best flavor.

Instructions

  • Step 1: Slice the avocados in half and remove the pit. Scoop out the flesh and cut into thick wedges.
  • Step 2: Set up a breading station with coconut flour, beaten eggs, and a mixture of almond meal, salt, black pepper, garlic powder, and onion powder.
  • Step 3: Dip each avocado wedge in coconut flour, then beaten eggs, and finally roll in the almond meal mixture.
  • Step 4: Wrap each breaded avocado wedge with a half strip of bacon and place seam-side down on a baking sheet.
  • Step 5: Preheat the oven to 400°F (200°C) and bake for 20-25 minutes until the bacon is crispy.
  • Step 6: Allow to cool slightly, then serve warm with your favorite dipping sauce.

Notes
