Ingredients

For the Tuna Mixture:

  • 45 oz Chicken of the Sea Albacore Tuna
  • 1/4 cup cucumber, diced
  • 1/4 cup purple onion, diced
  • 1 large avocado, diced
  • 2 tbsp cilantro, chopped
  • 2 tbsp mayo
  • 2 tsp lemon juice
  • to taste Salt
  • to taste Pepper

For Assembly:

  • 30 thick wheat crackers
  • 1 cup cherry tomatoes, sliced into discs
  • 1 cup Colby Jack cheese, shredded

Instructions

Cooking Instructions:

  • In a large mixing bowl, combine the Chicken of the Sea Albacore Tuna, cucumber, purple onion, avocado, cilantro, mayo, and lemon juice. Season with salt and pepper to taste. Gently mix everything together, being careful not to mash the avocado too much. You want the mixture to be chunky and flavorful.
  • Preheat your oven to 350°F (175°C). While the oven heats up, lay out your wheat crackers on a baking sheet. Make sure they are evenly spaced to allow for even melting.
  • Spoon a generous amount of the tuna mixture onto each cracker. You want a nice mound that will hold its shape. Top each mound with a slice of cherry tomato and a sprinkle of Colby Jack cheese.
  • Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
  • Remove the bites from the oven and let them cool for a couple of minutes. Serve warm on a platter and watch them disappear quickly!
