  • 14.5 oz Black beans Rinsed and drained (optional)
  • 2-3 Ripe mangoes Peeled and chopped
  • 2 Ripe avocados Diced
  • 1 Juice Lime
  • 0.5 teaspoon Salt Adjust to taste
  • Fresh cilantro For garnish (optional)

Instructions

  • Step 1: Cook the Rice - Rinse the rice under cold water until clear. Combine with broth in a pot, bring to boil, reduce heat, cover, and simmer for 15-20 minutes. Let sit covered for 5 minutes.
  • Step 2: Prepare the Ingredients - Chop mangoes and avocados. Rinse black beans if using.
  • Step 3: Combine Everything Together - Fluff rice in a bowl, mix in mangoes, avocados, and black beans. Drizzle lime juice, sprinkle salt, and stir gently.
  • Step 4: Garnish and Serve - Sprinkle cilantro on top and serve warm or at room temperature.
