Ingredients

  • 2 oz. Cotija cheese crumbled
  • 1/2 cup mozzarella cheese grated
  • 1/4 cup green onion sliced
  • 8 eggs beaten well
  • 2 T milk or half and half (optional)
  • 2 tsp. olive oil
  • 1/2 tsp. Spike seasoning
  • black pepper to taste
  • 1 large avocado sliced lengthwise

Instructions

  • Step 1: Preheat the Oven - Preheat your oven to 375°F (190°C).
  • Step 2: Prepare the Eggs - Beat the eggs well and mix in the milk or half and half if desired. Season with Spike seasoning and black pepper.
  • Step 3: Sauté the Green Onions - In an oven-safe skillet, heat olive oil and sauté green onions for 2-3 minutes.
  • Step 4: Combine the Ingredients - Pour the beaten eggs over the onions, then sprinkle Cotija and mozzarella cheese on top.
  • Step 5: Cook on the Stovetop - Cook undisturbed for 5-7 minutes until edges set but center is slightly runny.
  • Step 6: Add the Avocado - Place sliced avocado on top and gently press into the mixture.
  • Step 7: Bake the Frittata - Bake in the oven for 10-15 minutes until set and cheese is bubbly.
  • Step 8: Cool and Serve - Let cool for a few minutes before slicing. Serve warm.
