Ingredients

Baguette Slices

  • 12 slices Baguette Sliced into ½-inch thick pieces.

Olive Oil

  • 3 tablespoons Extra Virgin Olive Oil Divided for toasting and drizzling.

Avocado

  • 2 large Ripe Avocados Peeled and thinly sliced.
  • 1.5 cups Diced Tomatoes Can use sliced cherry tomatoes.

Herbs

  • 3 tablespoons Minced Herbs Such as basil, parsley, dill, or cilantro.

Coarse Salt

  • Coarse Salt To taste.

Instructions

  • Preheat your oven to 400°F (200°C). Slice the baguette into ½-inch thick slices and arrange on a baking sheet. Drizzle 2 tablespoons of olive oil over the slices.
  • Toast the baguette slices in the preheated oven for about 10 minutes or until crispy and golden brown. Remove and let cool slightly.
  • While the bread is toasting, slice the avocados thinly. Optionally, mash them lightly with a fork and sprinkle with coarse salt.
  • Assemble the crostini by laying a slice of toasted baguette on a platter, topping with avocado, and then adding diced or sliced tomatoes.
  • Finish by sprinkling minced herbs on top and drizzling with the remaining tablespoon of olive oil.
