  • 1 can white kidney (cannellini) beans drained and rinsed
  • 1 avocado peeled and chopped
  • 2 cloves garlic minced
  • 1/2 lime juice
  • 1/3 cup olive oil
  • 1 pinch salt

  • Start by draining and rinsing the white kidney beans. Peel and chop the avocado into several pieces for easier blending. Mince the garlic cloves finely.
  • In your food processor, combine the drained white kidney beans, chopped avocado, minced garlic, and lime juice. Pulse until the mixture starts to come together.
  • With the food processor running, slowly drizzle in the olive oil. This will help create a creamy consistency. Continue blending until smooth.
  • Add a pinch of salt and pepper to taste. Blend again to incorporate the seasonings. Adjust the seasoning if necessary.
