Ingredients

  • 1 packet Lipton or Knorr's Vegetable Recipe Mix
  • 16 ounces sour cream (preferably low-fat)
  • 1 cup mayonnaise
  • 10 ounces baby spinach (chopped or frozen, thawed and squeezed dry)
  • 8 ounces water chestnuts (drained and chopped; 1 can)
  • 2 green onions (chopped; optional)

Instructions

  • Step 1: Prepare the Spinach - Rinse fresh baby spinach under cold water, chop finely. If using frozen spinach, thaw and squeeze dry.
  • Step 2: Chop the Water Chestnuts - Drain and chop the water chestnuts into small pieces.
  • Step 3: Mix the Base - In a large mixing bowl, combine sour cream and mayonnaise until smooth.
  • Step 4: Add the Seasoning - Sprinkle the vegetable recipe mix into the sour cream and mayonnaise blend and stir well.
  • Step 5: Fold in the Spinach and Water Chestnuts - Gently fold in the chopped spinach, water chestnuts, and optional green onions.
  • Step 6: Chill - Transfer the mixture to a serving dish, cover with plastic wrap, and refrigerate for at least one hour.
  • Step 7: Serve and Enjoy! - Once chilled, serve with your favorite dippers.
