Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a medium saucepan, combine the whole milk, cream, and flour over medium heat. Whisk until smooth, then add salt and pepper. Continue whisking until thickened (3-5 minutes).
Step 3: In a large bowl, add cubed potatoes and pour the creamy sauce over them. Fold gently to coat, then stir in ¾ cup of cheddar cheese.
Step 4: Grease a 9x13 inch baking dish and pour the potato mixture into it, spreading evenly.
Step 5: In a separate bowl, combine cornflakes and melted butter. Stir to coat, then sprinkle over the casserole. Top with remaining cheddar cheese.
