Ingredients

Dairy

  • 1 cup whole milk
  • 1 cup cream

Dry Ingredients

  • 2 tablespoons flour
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Vegetables

  • 5 pieces russet potatoes, cut into 1/2 inch cubes

Cheese

  • 1 cup shredded cheddar cheese ¾ cup for mixing, ¼ cup for topping

Toppings

  • 3 cups cornflakes
  • ¼ cup butter, melted

Garnish

  • to taste fresh parsley, chopped for garnish

Instructions

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a medium saucepan, combine the whole milk, cream, and flour over medium heat. Whisk until smooth, then add salt and pepper. Continue whisking until thickened (3-5 minutes).
  • Step 3: In a large bowl, add cubed potatoes and pour the creamy sauce over them. Fold gently to coat, then stir in ¾ cup of cheddar cheese.
  • Step 4: Grease a 9x13 inch baking dish and pour the potato mixture into it, spreading evenly.
  • Step 5: In a separate bowl, combine cornflakes and melted butter. Stir to coat, then sprinkle over the casserole. Top with remaining cheddar cheese.
  • Step 6: Bake for 45-50 minutes until potatoes are tender and topping is golden brown. Cover with foil if browning too quickly.
  • Step 7: Let cool for a few minutes, garnish with parsley, and serve warm.
