  • 8 oz Asparagus, cut into 1-inch pieces
  • 1/3 cup Feta cheese, crumbled
  • 1 Tbsp Olive oil
  • 1 clove Garlic, minced

Egg Mixture

  • 3 large Eggs
  • ¾ cup Milk
  • ¼ cup Heavy cream
  • ½ tsp Dijon mustard

Seasoning

  • Salt and pepper to taste

Instructions

  • Step 1: Preheat the Oven - Begin by preheating your oven to 375°F (190°C).
  • Step 2: Prepare the Pie Crust - Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
  • Step 3: Sauté the Vegetables - Heat olive oil in a skillet, add onions, and sauté until translucent. Add garlic and asparagus, cooking until tender.
  • Step 4: Whisk the Egg Mixture - In a bowl, whisk together eggs, milk, heavy cream, and Dijon mustard. Season with salt and pepper.
  • Step 5: Combine the Filling - Add the cooled asparagus mixture to the egg mixture and fold in feta cheese.
  • Step 6: Fill the Pie Crust - Pour the filling into the prepared pie crust, spreading it evenly.
