Instructions
Step 1: Prepare the Brie by removing the casing. Freeze for 15 minutes for easier removal.
Step 2: Roll out each sheet of puff pastry on a floured surface and cut into 3x3 inch squares.
Step 3: Preheat oven to 400°F (200°C). Place apricot preserves and Brie on each pastry square.
Step 4: Fold corners of pastry over the filling to seal. Brush with egg wash if desired.
Step 5: Bake on a parchment-lined baking sheet for 15-20 minutes until golden brown.
Step 6: Allow to cool slightly before serving warm.
