Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated white sugar
  • 1 pinch salt
  • 1/2 cup chilled unsalted butter cut into small pieces

For the Filling:

  • 1 cup dried apricot halves chopped finely
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped toasted walnuts
  • 2 tablespoons powdered sugar for dusting

Directions:

  • Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C).
  • Step 2: Make the Crust. In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, and a pinch of salt. Add 1/2 cup of chilled unsalted butter and mix until the mixture resembles coarse crumbs. Press into a greased 9x9-inch baking pan.
  • Step 3: Bake the Crust. Bake for 15-20 minutes, or until lightly golden.
  • Step 4: Prepare the Filling. In a separate bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. In another bowl, beat together 2 large eggs, 1 cup of packed light brown sugar, and 1 teaspoon of vanilla extract.
  • Step 5: Combine Wet and Dry Ingredients. Gradually add the dry ingredients to the egg mixture, stirring until just combined. Fold in the chopped dried apricots and walnuts.
  • Step 6: Assemble the Bars. Pour the apricot filling over the hot crust and spread evenly.
  • Step 7: Bake the Bars. Bake for an additional 25-30 minutes, or until the filling is set and lightly browned.
  • Step 8: Cool and Slice. Let cool completely, dust with powdered sugar, slice into bars, and serve.
