Ingredients

  • 4 cups mixed salad greens such as baby spinach, arugula, and spring mix
  • 1 cup fresh cranberries
  • 1 large apple diced, crisp variety like Granny Smith, Honeycrisp, or Fuji
  • 1/2 cup pecans toasted
  • 1/4 cup feta cheese crumbled, optional
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup pure
  • salt and pepper to taste

Instructions

  • Place pecans in a dry skillet over medium heat. Stir frequently and toast until golden brown and aromatic, about 4–5 minutes. Alternatively, toast pecans in a preheated 350°F oven for 6–8 minutes. Remove from heat and cool.
  • Rinse mixed greens thoroughly under cold water. Spin or pat dry to remove excess moisture. Place greens in a large salad bowl.
  • Core and dice the apple into bite-sized cubes. Add diced apple and fresh cranberries to the salad bowl with the greens.
  • If using feta cheese, crumble it finely and sprinkle over the salad ingredients.
  • In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, salt, and pepper until smooth and emulsified. Taste and adjust seasoning.
  • Drizzle the maple vinaigrette over the salad and toss gently to combine without bruising the greens. Sprinkle toasted pecans on top and serve immediately.
