Ingredients

  • 4 cups green cabbage shredded
  • 1 cup carrots grated
  • 1 apple julienned (e.g., Granny Smith or Honeycrisp)
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • salt and freshly ground black pepper to taste
  • 1/4 cup green onions chopped

Instructions

Step 1: Prepare the Vegetables and Apple

  • Start by shredding 4 cups of green cabbage finely. Grate 1 cup of carrots using a box grater or food processor. Julienne 1 apple into thin matchstick-sized pieces.

Step 2: Make the Dressing

  • In a small bowl, whisk together 1/2 cup mayonnaise, 1/4 cup apple cider vinegar, 2 tablespoons Dijon mustard, and 1 tablespoon honey until smooth and creamy. Season with salt and freshly ground black pepper to taste.

Step 3: Combine the Slaw and Dressing

  • Place the shredded cabbage, grated carrots, and julienned apple in a large mixing bowl. Pour the dressing over the slaw mixture and toss thoroughly to coat evenly.

Step 4: Add the Final Touch

  • Fold in 1/4 cup chopped green onions for a fresh, mild bite. Toss gently. Taste and adjust seasoning with more salt or honey if needed.

Step 5: Chill and Serve

  • Let the slaw chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld and cabbage to soften slightly while retaining crunch.

Equipment

  • Sharp Chef’s Knife
  • Box Grater or Food Processor
  • Mixing Bowl
  • Measuring cups and spoons
  • Whisk or Fork
  • Cutting Board

Notes

  • Store the slaw in an airtight container in the refrigerator for up to 3 days; flavors develop further but cabbage may soften.
  • For best texture when storing ahead, keep dressing separate and toss just before serving.
  • Substitute mayonnaise with Greek yogurt for a lighter dressing or use vegan mayo and maple syrup for a vegan option.
  • Add extra tang with whole grain mustard or more apple cider vinegar if desired.
  • Boost crunch by tossing in toasted sunflower seeds or chopped walnuts, or add fresh herbs like parsley or dill for variation.
