Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs for the buttery crust
  • 1/2 cup unsalted butter melted, binds the crust together
  • 1/4 cup sugar adds a touch of sweetness to the crust

For the Cheesecake Filling:

  • 16 oz cream cheese softened, the creamy base for the cheesecake layer
  • 1 cup sugar sweetens the cheesecake filling
  • 1 tsp vanilla extract enhances the flavor
  • 3 large eggs provides structure to the cheesecake
  • 1 cup apple butter infuses rich apple flavor with warm spices
  • 1 tsp ground cinnamon adds that signature warmth
  • 1/4 tsp nutmeg complements the cinnamon with a subtle spice
  • 1/4 cup chopped pecans optional, for crunchy texture and nutty flavor

Instructions

Step 1: Prepare the Crust

  • Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Stir until the mixture resembles wet sand and all crumbs are coated. Press the crust mixture firmly and evenly into the bottom of your greased 9x9-inch baking pan. Bake for 10 minutes to set the crust, then remove from the oven and allow to cool slightly while preparing the filling.

Step 2: Make the Cheesecake Filling

  • Using an electric mixer, beat the softened cream cheese on medium speed until smooth and creamy, about 2 minutes. Gradually add 1 cup sugar and continue beating until well combined. Mix in the vanilla extract. Add the eggs one at a time, beating on low speed after each addition just until blended. Avoid overmixing to prevent cracks.

Step 3: Add Apple Butter and Spices

  • Stir in the apple butter, ground cinnamon, and nutmeg until fully incorporated. The batter will have a beautiful swirled, creamy texture with warm, inviting aromas.

Step 4: Assemble and Bake

  • Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula. If you’re including pecans, sprinkle them evenly over the batter. Bake for 40-45 minutes, or until the edges are set and the center slightly jiggles when gently shaken. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.

Step 5: Slice and Serve

  • Once chilled, use a sharp knife to cut the cheesecake into bars. For clean cuts, dip your knife in hot water and wipe it dry between slices. Serve chilled or at room temperature, perhaps alongside a cup of coffee or tea.
