Ingredients

  • 1 1/4 cup blanched almond flour (not the same as almond meal)
  • 1/8 tsp salt (fine grind sea salt)
  • 1/4 tsp baking soda
  • 1/2 cup freshly grated cheddar cheese (see notes)
  • 1 1/2 T neutral-flavored oil
  • 1 large egg

Instructions

  • Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C).
  • Step 2: Mix Dry Ingredients. In a mixing bowl, combine the blanched almond flour, salt, and baking soda. Stir well.
  • Step 3: Add Cheese and Wet Ingredients. Add the cheddar cheese, oil, and egg to the dry mixture. Mix until a dough forms.
  • Step 4: Roll Out the Dough. Place the dough between two sheets of parchment paper and roll it out to about 1/8-inch thickness.
  • Step 5: Cut Into Shapes. Cut the rolled-out dough with a cookie cutter or knife and place on a baking sheet.
  • Step 6: Bake. Bake for 12-15 minutes or until golden brown.
  • Step 7: Cool and Enjoy. Allow the crackers to cool on a wire rack before serving.
